French Silk Pie

 Pie Crust:

Preheat oven 350*

5 Oz chocolate waffers, finely ground (Oreo)

1 stick butter, melted

1/4 C. sugar

Spread in pie plate. Bake 8 minutes 

In a Sauce Pan:

2 eggs 

2/3 C. Sugar

Stir, low temp, whisking until 160*. 

Add:

2 oz unsweetened dark chocolate

1 tsp vanilla

Remove from heat and whisk until melted. Set aside to cool

Cool crust 20 minutes.

In KitchenAid

1/3 c soft butter, whisk 30 seconds

2/3 C. heavy cream

1/4 C. powdered sugar

Add Chocolate mixture for 5 minutes on high speed until light and fluffy

Fold in Whip Cream 

Add to pie crust, Chill 4 hours

For Whip cream for top- 1-2 minutes

1/4 C powdered sugar

1 pint heavy cream

1 tsp vanilla
