Balsamic Mediterranean Salad

In a serving bowl, add 


1 bag Persian cucumbers, diced

1 red onion, minced

3 multi colored bell peppers, diced

1 large bunch parsley, minced

2 avocados, diced 

2 cans rinsed and drained chickpeas


Mix in:

1/2 c. olive oil

Juice of 2 lemons

1/4 c. balsamic vinegar 

1 T oregano

Big pinch red pepper flakes (I add more)

1 tsp. cumin (calls for 1 T, I add less) 

1 T sea salt
