Beef Burrito Bowl

 Saute:

1/2 medium yellow onion

1/2 T olive oil


Brown 1 lb. Ground beef,  remove and set aside.

Cook together 2-3 minutes:

1 1/2 T olive oil

1 1/2 pound (600 grams) cauliflower rice

1 tsp. onion powder

1 tsp. garlic powder

1 tsp. paprika

1 tsp. cumin

1/2 tsp. chili powder

Stir until mixed well. Add:

12 oz. tomatoes with green chiles

1/4 C. beef broth

Stir and bring to a simmer. Add beef/onion mixture. 


Top with 2 C jack cheese. Let melt. 

Optional toppings: Red bell pepper, red onion, cilantro, jalapeno pepper, avocado, lime
