Spinach Berry Salad

Salad

6 C. baby spinach
1 C. strawberries, halved
1/2 C. raspberries
1/2 C blueberries
1/3 C. feta (or goat cheese)
1/3 C red onion, thinly sliced
1/4 C. pecans, roughly chopped
1/2 raspberry vinaigrette

Dressing

1 1/2 C. raspberries, fresh or frozen
1/2 C. olive oil
1/4 C. red wine vinegar
1 small shallot, diced (2T)
1 tsp dijon mustard
1/4 tsp salt
pepper to taste

Add to food processor, blend 30 seconds.  Store in refrigerator 1 week
