Split pea soup

1 lb. dried green split peas
2 C. diced ham
2 carrots, chopped
1 onion, chopped
2 stalks celery, chopped
2 cloves garlic, minced
1 bay leaf
salt and pepper to taste
6 C. chicken broth
1/4 C. chopped fresh parsley, for garnish

Add split peas to crock pot, in a single layer.  Top with ham & veggies, add bay leaf and S & P.  Pour the chicken broth over mixture and do not stir.  Cover and set to high.  Cook 5-6 hours, or until peas are falling apart.  Serve with fresh parsley.
