Mexican Wedding cookies

2 C. butter, softened
1 C. powdered sugar
5 T. honey
1/2 tsp salt
4 1/4 C. flour
2 tsp almond extract
1 C. chopped nuts, optional

Cream together butter, sugar, honey, almond extract. Then add flour, salt, and nuts ( if using). Mix until blended.  You may have to use your hands to get it combined.  Roll into 1" balls and place on cookie sheet. Bake 350* for 12-15 minutes.  Immediately set on a plate with powdered sugar and roll until covered.  Cool, and then roll again in powdered sugar.
