Taffy Apple Salad

8-10 granny smith apples, leave skin on, diced
16 oz. crushed pineapples
1 C. sugar
2 T flour
2 eggs
4 T apple cider vinegar
16 oz. cool whip
2 C. dried roasted peanuts, chopped & divided

In a saucepan mix pineapple sugar, flour, eggs, vinegar until thick.  Put in fridge, chill.  Mix 1 1/2 C nuts, cool whip and add to sugar mixture.  Fold together, add remaining 1/2 C peanuts on top and let chill in the fridge.
