Roasted Lime- Cilantro Roast
8 garlic cloves
1 jalepeno pepper, seeded
1/4 cup chopped fresh cilantro
1/4 cup lime juice
1 T coriander seeds
1 T cumin
1 T coarse salt
1 T olive oil
1 4.5 pound eye of round roast
Process first 8 ingredients in a food processor until a thick paste forms, stopping to scrape down the sides.
Make 4 1'' cuts in each side of the roast.
Fill each cut with 1 tsp of paste
Spread remaining paste over beef.
wrap tightly with plastic wrap;chill for at least 8 hours- up to 24 hours
unwrap roast; place in a 9x13 pan
Bake covered at 325* for 3 hours and 15 minutes. 180* thermometer.
Let stand 10 minutes before shredding.
