Manicotti
1 lb. ground beef or turkey
1/2 C. chopped onion
2-3 cloves garlic, mined
4 C. canned tomato juice
6 oz. can tomato paste
1 tsp oregano
1 tsp sugar
1 tsp salt
1/4 tsp pepper
1 tsp. basil
8 oz. manicotti shells
3 C. grated mozzarella cheese
15 oz ricotta or cottage cheese
10 oz. chopped frozen spinach, thawed and drained
2 eggs, beaten
1/2 C. grated Parmesan cheese
Saute beef, onions and garlic. Pour off fat. Add 2 cups tomato juice, paste, spices and sugar. Simmer while preparing filling. In a large bowl, combine 2 cups mozzarella, ricotta, spinach, eggs, and Parmesan cheese. Mix well and stuff into uncooked manicotti shells. Arrange in a greased 9 X 13
baking dish. Spoon meat sauce over shells and pour over remaining 2 cups tomato juice. Cover with foil and bake 350* for 1 hour. Top with remaining mozzarella cheese and let stand 15 minutes before serving. Serves 6-8.
