Farmer's Casserole

3 C. frozen hash brown potatoes
3/4 C. shredded pepper jack cheese
1 C. cooked ham, diced
14 C. chopped green onions
4 eggs, beaten
1-12 oz can evaporated milk
1/4 tsp. pepper
1/8 tsp salt

Preheat oven to 350* Grease a 2 qt. baking dish
Arrange hash browns on bottom of pan.  Sprinkle with pepper jack, ham and green onions. 

In  medium bowl, mix eggs, milk, salt and pepper.  Pour egg mixture over potato mixture.  The dish may be covered and refrigerated for several hours or overnight.  

Bake for 40-45 minutes in preheated oven or until a knife comes out clean. {10-15 minutes longer if made ahead and chilled} Let stand 5 minutes before serving.
