Glazed Citrus Doodles
Found this recipe in the Everyday Food {Martha Stewart} magazine. Heather is really good at making these cookies. They are pretty amazing.
2 3/4 C. flour
1 T baking powder
1/4 tsp. salt
1 C. butter, room temperature
1 1/2 C. sugar
2 T. grated orange zest, plus 3 T juice {from 2 oranges}
4 tsp. lemon zest, plus 3 T juice {from 2 lemons}
2 large eggs
2 1/2 C. powdered sugar
Preheat oven to 350*, Whisk flour, baking powder, and salt. In a large bowl, using electric mixer, beat butter, sugar, 1 T. orange zest, and 2 tsp lemon zest on medium/high until pale and fluffy, 3 minutes. Beat in eggs, one at a time. Add flour mixture; beat to combine.
Roll dough into 1" balls and place on baking sheet. Bake 12-15 minutes. Let cool on wire racks, cool completely.
Whisk together 1 T orange zest, 2 tsp. lemon zest, citrus juices and powdered sugar until smooth. Spread glaze over each cookie, with a spoon. Let set 1 hour.
