Pork Barbacoa

2 1/2- 3 1/2 lb. Pork Loin roast
1/2 C. dark brown sugar*
1/2 C. Worcestershire sauce
1/2 tsp. oregano
1/2 tsp. powdered ginger
1 tsp. salt
1 tsp. chili powder
1 tsp. garlic powder
2 T. dried minced onion
1 can red enchilada sauce

Cook all ingredients ( Except enchilada sauce & brown sugar) in a crock pot, approximately 4 hours on high.  When done, shred pork.  Then combine 1 can of red enchilada sauce and 1/2 C. brown sugar and pour on top.

*I use regular light brown sugar.We love this for Burritos
