Brownies

We have a few brownie recipes we use, and the kids love this one because it has frosting! Got it from my friend Kara.

4 (1 oz) squares unsweetened baking chocolate
1 C. butter
4 eggs
2 C. sugar
1 tsp. vanilla
1 1/4 C. flour
1/2 tsp baking powder

Preheat oven to 350*.  Line a 9 X 13 pan with foil and spray with non-stick cooking spray.

Chop both the chocolate and butter into chunks and place together in a microwave safe bowl {Or you could use a double broiler if you don't like the microwave. This is the method I use}  Microwave in 30 second intervals, stirring in between, until melted and smooth.  Set aside to cool.

With electric mixer, beat eggs, sugar, and vanilla for 2 minutes.  While egg mixture is being beaten, measure out the flour and combine with baking powder.  While mixer is running, slowly add the melted chocolate and beat to combine.  Turn the mixer to slow and add it flour, by the spoonful, mixing until combined.  Pour batter into prepared pan.  Bake for 20-30 minutes, until toothpick comes out clean.  Cool completely before frosting.

Frosting:

6 T milk
2 {1 oz} squares baking chocolate
1/2 C butter
1 lb. powdered sugar
1 tsp. vanilla

Combine milk, chocolate and butter in a medium saucepan.  Heat until bubbles form around the edges.  Remove from heat and add powdered sugar and vanilla and beat until smooth. Frost brownies
