Spanish rice
I've used this recipe for most of my married life. I got it from my friend Anna when Rachel was little. It's simple and yummy.
Spanish Rice
Add: 1 T. oil, 1 onion {diced}, and 2 cups rice into pan. {I use a large sauce pan with a lid}. Cook until onion is clear, and before rice starts to brown.
Mix in a blender: 1 can of stewed tomatoes, 1 T. chicken bouillon and enough water to make 4 cups.
Pour tomato mixture into rice, bring to boil. Simmer 20 minutes.
*I try to find the Mexican blend stewed tomatoes, but the onion, pepper blend works well too.
As my friend Mzia would say: "Yam yam". I can vouch for this recipe. And the tamale looks divine----did you make those too?? Dad was hungry for tamales yesterday :) And didn't get them :(

ReplyDeleteI just made homemade spanish rice for the first time ever last Thursday. I was telling the sample lady at Sam's Club about the enchiladas I was making that night for dinner (your recipe) and she suggested I make my own rice. The thought never occurred to me until then but it was amazing! The only difference in how I made mine was that I added about 1 T. chili powder to the onion, oil mixture and then toasted my rice. The sample lady recommended adding sliced green onions to the initial mixture but I didn't have any on hand. I think it would be yummy though.
